Less than a decade ago, a series of tests in a Seattle, Washington distillery to offer a different approach to vodka took more than two years to complete, but resulted in the creation of Bakon Vodka. One variation with this vodka, besides the flavor, is the fact that this is strictly column-distilled, an effort the makers say prevents so called "bruising" of the product that results when using pots. Obviously, the aroma that emanates from it is that of bacon, with equal parts sweetness and smoke. Also included is a peppery foundation that follows through with the taste as well. With a complex nature, it's something that can be tested in a variety of capacities. When using it to mix cocktails, the Bloody Mary seems to make the perfect match, given Bakon's ability to wrap some sweetness around the harsh delights that are part of that classic drink's experience.
