Each bottle of Chopin potato vodka contains just three ingredients; yeast, clean, artesian well-water, and locally grown, pesticide and chemical-free potatoes that are exclusively produced by specially selected farmers in the fertile soil of the Podlasie countryside. The potatoes are harvested at the end of the season for the desired higher starch content of 22%, versus the average 12%, which gives this spirit its rich, full flavor. Due to the lateness of the harvest, its production is limited to mid-September through early December. After the mash has been fermented for three days, the fermented final product is then distilled four times, mixed with the well water, and then filtered five times before bottling; the classic frosted bottle bearing the composer's profile. It has a seductive nose, with sublime aromas of green apple and vanilla. The flavor is fully developed and creamy, with a comforting earthiness and a long, clean finish.
