While both bourbon and scotch play on the same foundation of the ancient Water of Life—uisge or whiskey as it's known today—there are further refinements that are requisite for each category of spirits. Scotch must be aged for a minimum of three years under appropriate conditions, overseen by a master blender. Chivas ages their robust scotches for a minimum of 12 years, and works to balance the harmonies created by blending different varietals for a consistently smooth, elegant spirit. The bouquet or nose calls to mind the wind over the heaths in early summer—wild herbs, heather, and honey with a finish of refined orchard fruits emanates from this beautiful golden distillation. On the palate, crisp, honeyed apples with notes of delicate butterscotch, vanilla, and hazelnut deepen into a truly eloquent, round finish. This is best enjoyed neat, and pairs well with all the bounty of nature, as well as caramel or cream.
