Hailing from the Big Easy and from the oldest premium rum distillery in the country, Old New Orleans Amber Rum takes a little time before surfacing, spending as much as three years with old whiskey barrels that have been repurposed as charred American oak barrels. That process is coupled with the fact that it's distilled in small batches. However, the fact that the very best in blackstrap molasses is present at the creation shows that tender loving care and an attention to doing it right are the main concerns. A swirl of butterscotch with brown sugar included for good measure is what breaks through with the aroma. The molasses already present is joined by vanilla and caramel when it comes to notes, and the taste is one that's subtle but sweet, with wood and smoke finding a way to make their presence felt among this prime offering for a cocktail.
