Paying tribute to a 19th Century recipe of this iconic drink involved a lot of work researching exactly what the process was in the creation of Jensen Old Tom Gin. By making this arduous effort, the finished product is one that can certainly claim its spot as to the most authentic reproduction. After going through papers from the 1840's, it was determined that no sugar should ever be a part of this version, only the classic botanicals that have a heavy reliance on the licorice. The ever-present juniper is what grabs hold of the nose, which is then joined by a little bite from spice and pine before closing with citrus aspects and the aforementioned licorice, which continues when the palate gets an opportunity to experience a sample. Given the flexibility that comes about because of its sugar-free status, options for any number of cocktails that demand gin are expanded.
