Jensen Old Tom Gin is a true taste of history. The addition of sugar is the most striking difference between most contemporary old tom gins and the more common London dry style. Extensive research by the creators of Jensen Old Tom Gin, however, found that earlier old tom recipes did not use sugar at all. Back in the early nineteenth century, sugar was quite expensive and adding it to a moderately priced spirit would have made little economic sense. While old tom gins of the period were indeed somewhat sweet, this was due to the addition of greater quantities of botanicals -- such as orange peel and licorice -- rather than sugar. Jensen Old Tom Gin, which is based on a recovered 1840 recipe, is designed to capture the unique essence of these early, pre-sweetened old tom gins. Due the high quantities of botanicals used, it is intensely flavorful. It makes for a sublime, complex gin and tonic and stands up very well in any cocktail that features other strong flavors.
