There aren't too many gins that actually make the effort to do research in order to recreate an old-style drink, but that's what has happened with Jensen Old Tom Gin. By using a recipe from the 1840's as the basis for this drink, it certainly sets itself apart from the current crop of gins, in part because of its unsweetened approach. It's made in a specifically-designed still that uses a water jacket that can heat up the botanicals and alcohol. The aroma is a mix of both sharp and sweet, with pepper connecting with citrus amid a wood note. The palate finds a combination of herbs and licorice to tantalize those who sample it. This is the type of drink that's versatile enough to be used in a variety of cocktails, so that those drink can be enhanced just enough to make sure that Jensen becomes the gin of choice.
