Downslope Ould Tom is distilled in the same manner as the classic, London Dry style of gin; extremely dry and dense, with citrus and juniper taken from a mixture of neutral grain spirits. However, this gin is not distilled from grain, but from cane. The spirit that it is combined with, is first pot distilled; the antithesis of neutral. After it has been transferred to a small, hybrid still, the eleven carefully chosen botanicals are then infused into the batch. Instead of the process of infusion to occur there, however, the spirit and the botanicals are joined in the ascending vapors in the column. Ould Tom's aroma is a harmonious blend of the fundamental juniper, exotic spices, and light, bright citrus, with a firm foundation of caramel. A satisfying viscosity carries the flavor of all of the botanicals across the tongue, ending with juniper, and just a touch of cardamom.
