An organic gin from Pittsburgh is not the calling card people expect when they order a drink, but this virtually new offering more than stands on its own. Introduced just in the past few years, the product is an amalgamation of locally sourced grains that are organic in nature but aged in a white ash barrel and distilled from a copper pot. The end result is a richer tasting experience that makes sure that juniper berries remain the focal point of this experience. They mix with a flow of exotic botanicals like cubeb and cardamom, and are able to connect with the wheat, malted barley and rye. In addition, lavender and pepper make cameo appearances on the palate, while the more acidic citruses help bring warmth along for the ride. This is a drink begging to become part of a martini or gin fizz, but it needs the correct invite.
