In less than a decade, Aviation Dutch Style Gin has made its mark, branching out from its origins in the Northwest to establish itself as a gin that people across the world seek with increasing interest. This Spirits stamps itself as a true Northwest product by including out of the ordinary botanicals like elletaria cardamom, coriander, sarsaparilla, anise seed, dried sweet orange peel, lavender and of course, juniper. From there, these botanicals are blended, placed in a cloth sack before then being put in container with the Spirit, a process that evokes the making of potent tea. The resulting blend is then pumped into a 400-gallon still and heated, all the while with close attention being paid to what's taking place. The first portion of fluid that comes from the still is worthy of making the cut. From there, pure water is added, then aged a few days and bottled.
