Aviation alcohol is of course a name that is known to any serious fan of spirits, but with Aviation Dutch Style Gin, Aviation has come upon something special. Aviation Dutch Style Gin is essentially a genever, and though this might feel a little antiquated, the result is an alcohol that is impressively delicious. Unlike standard gin, there is a very sweet taste to this alcohol. It is not especially dry, and it was produced from a rye grain base. This gives this spirit a rather round and mellow taste, contrasting it with gins that are made from bases that are more 'transparent' in flavor. While of course juniper is one of the prevalent flavors of Aviation Dutch Style Gin, it is on the whole more spicy than crisp. The spices used include coriander, anise and cardamom, creating a result that is both warming and quite bracing. Aviation Dutch Style Gin does quite well in a cocktail, though it may also be sipped neat.
