The Dutch spirit Bols Genever is a lightly distilled gin, crafted from locally grown Dutch grains and a complicated array of botanicals. Bols' first Genever was produced in 1664, and it is still being distilled according to a family recipe that has not changed in almost 200 years. Its exceptionally silky flavor comes from the high content of a special grain distillate known as malt. Bols Genever is a limited production spirit that is aged in oak barrels for at least 18 months. The extended aging process is what gives it its soft, incandescent golden hue and deep,rich, oaky taste. Other than the Netherlands, its biggest markets are the U.S., Russia, Japan, Australia, and U.K. It can be enjoyed, neat, over ice, or as a mixer in any gin cocktail, such as the classic Collins. Traditionally, it is consumed straight up, in the manner referred to, as "Dutch Courage".
