This award-winning gin is produced in the Bay Area, and done in consistent fashion whereby its creative process begins in a 1,000-gallon copper pot. While that size may denote speed as the cornerstone of its production method, nothing could be further from the truth. That's because a lengthy 11-hour stretch is involved just to get it ready to be distilled. Before that is the necessary milling and blending of the many botanicals involved ( such as cassia, cardamom, coriander, bergamot, angelica root and, of course, juniper.) Patience has its own reward and that begins with the aroma that puts the juniper front and center with a citrus mix. A smooth body that also takes into consideration a spicy component that mirrors a twist of bran is countered with the light hints of lemon that shine through. This is a drink that cries out for use in a Gin and Tonic.
