Maturity for some grapes in cognac can take an extended period of time, but for the Maxime Trijol XO brand, that aging is more than worth the wait. That's because the ones used here are aged in French oak barrels that bring out the best. Sweet fruity aromas like orange, lemon and papaya arrive quickly to offer some early sweetness. However, that changes methodically as hints of mint and licorice give way to pepper to grab hold of an individual's attention. Once it reaches the palate, the oak from which it came makes a cameo appearance before flavors like chocolate, figs and raisin arrive. The fruit and mint that first showed up for the nose return, and help coordinate a merry mix of sweet and spicy taste sensations. This is the type of drink that could be considered perfect for diners when it's enjoyed in conjunction with a tart dessert.
