Good things often require time to become truly great. This is especially true of Martell’s XO cognac, with its origins in the Champagne and Borderies regions. Aged as much as 35 years in special French oak barrels, this deeply amber spirit brings distinction and tradition along with it as a matter of course. The rich composition of this cognac begins with the highly structured, brilliant notes characteristic of the Champagne teroire, and are quickly joined by the velvet decadence of Borderies repute. Notes of sharp black pepper and piquant herbs are complimented by the suggestion of juicy red berries. Deeper currents of savory fig chutney and the richness of almonds and walnuts provide substance, a roundness upon the palate. The finish is decidedly smokey and grounding, with an elongated phrase written in exotic sandalwood and the purity of beeswax. This cognac is truly an event worth celebrating in and of itself--a masterpiece to be cherished slowly and in the best of company.
