When Richard Hennessy founded his house of cognac in the 18th century after immigrating to France from Ireland, he could have only dreamed that his legacy would last into the 21st century. Hennessy XO is an embodiment of the history of one of the best-known cognac brands. With the designation "XO," a cognac's maker is telling its consumer that a product contains spirits that have aged at least six years on oak. Indeed, some of the cognac in such a bottle could have aged for decades longer. It is unlikely that Hennessy still owns casks from the 1700s, but you can see how drinking a snifter of Hennessy XO is like drinking history. You can also see that this is no "party-time beverage." Hold onto a bottle of Hennessy XO for important celebrations that cannot accept lesser liquids. When you do serve Hennessy XO, do it with a little responsibility.
