Situated in the westernmost area of the Cognac region, the island of Ile de Re boasts its own mild, marine climate, producing a grape with a higher iodine level. This imparts an altogether different personality on the eaux-de-vie that is produced there, resulting in the crisp, oceanic notes that are the hallmark of Fine Island VSOP. The deliberate distillation on the lees enhances and preserves as much of the eaux-de-vie's original character as is possible. Its subsequent aging, in a wet cellar, in oak barrels that have received a light toasting, give it its mild, woody aroma. The color is that, of golden straw. The nose is predominate with crisp broom, and marine-like iodine notes. To the palate, the taste is primarily of dried fruit and spice, followed by hints of floral and oak. It is ideally enjoyed either neat, on the rocks, or chilled, and served with a seafood.
